Description

A make-ahead appetizer for those unexpected guests! Makes around 5 dozen Cheesy Sausage Roundups that you can refrigerate or freeze.

Ingredients

  • 8 ounces, weight Hot Pork Sausage
  • ½ cups Red Bell Pepper, Finely Minced
  • 1 whole Jalapeno, Most Seeds Removed, Finely Minced
  • ½ pounds Butter, Softened
  • 2 cups All-purpose Flour
  • ½ teaspoons Salt
  • ½ teaspoons Black Or Cayenne Pepper
  • 4 cups Shredded Cheddar Cheese, Room Temperature

Preparation

In a medium-sized frying pan, cook sausage over medium heat until browned. Drain grease. Add minced peppers. Cook until peppers are soft but not squishy, around 5 minutes. Remove from heat and allow the mixture to cool.

Preheat oven to 400 F. In a large mixing bowl, combine butter, flour, salt, and pepper. Beat with a mixer on medium low speed until combined. Add the shredded cheese and stir well. Add cooled sausage mixture and stir until well blended.

Form dough into 1 inch balls and place them on a parchment paper lined baking sheet 2 inches apart. Bake in a 400 F oven for 15-20 minutes or until light golden brown. I usually do this in two batches which makes the total cooking time 30-40 minutes.

Serve warm or cold. You can store these in the refrigerator or freezer. Makes about 5 dozen.
