Description

Quick and easy mini pizzas with a BBQ sauce base. A terrific way to use up pita bread. Yum!

Ingredients

  • 4  Pita Rounds, Cut In Half
  • ¼ cups BBQ Sauce
  • ¼ cups Cooked, Cubed Chicken
  • ¼ cups Onion, finely chopped
  • ¼ cups Red Bell Pepper, Finely Chopped
  • 2 cloves Garlic, Minced
  • ¾ cups Mozzarella Cheese

Preparation

Preheat oven to 400ºF.

Take whole pita bread circles and cut them in half if they are not already cut. Place on a parchment-paper-lined pizza pan. Drizzle BBQ sauce over the pita halves and spread the sauce with the back of a spoon. Evenly top each pita half with the cubed chicken, onion, pepper, and minced garlic. Evenly top each pita with cheese.

Bake until cheese melts, about 6–8 minutes. Remove from oven and let cool slightly. Transfer to a serving plate.
