Description

A versatile quick and easy quiche to make for a special breakfast, an elegant brunch, or a healthy side dish for dinner. It’s versatile because the cheese selection is up to you!

Ingredients

  • 1  Unbaked, Deep Dish Pie Shell
  • 1 package Frozen Chopped Spinach, 10 Ounce Package
  • 2 cups Cheddar Cheese, Shredded (or Other Favorite Cheese)
  • 2 Tablespoons Flour
  • 1 cup Milk
  • 2  Eggs, Beaten
  • 3 slices Cooked Bacon, Broken Into Pieces, Or Real Bacon Pieces From The Store, About A 1/4 Cup
  • ½ teaspoons Salt
  • 1 dash Black Pepper

Preparation

Heat oven to 375 F. Put your pie shell into a deep dish pie plate and set aside.

Cook spinach according to package directions. Drain the cooked spinach in a colander then gently squeeze it between your hands when cool enough to handle, getting as much water out as possible.

Meanwhile, in a large bowl, toss shredded cheese with the flour. Add milk. beaten eggs, bacon pieces, salt and pepper; mix well. Add spinach and mix well again.

Pour into prepared deep-dish pie shell. Bake for 30 minutes. Insert a butter knife into the center of the quiche to test for done-ness. If the knife comes out clean, quiche is ready to take out of the oven. Remove it from the oven and set dish on a rack. Cover with waxed paper for 10 minutes to let it set.
