They’ll Make You Sing Muffins

Description
These chocolate cranberry and pistachio muffins will surely make you sing.
Ingredients
- 2 sticks Butter
- 3 ounces, weight Semi-sweet Chocolate Square (3 Squares)
- 1 cup Cranberries (washed And Dried)
- 1-¾ cup Pistachios, Shelled Dry Roasted And Salted
- 1 cup All-purpose Flour
- 1-¾ cup Sugar
- 4 whole Eggs
- 1 teaspoon Vanilla
Preparation
Preheat oven to 350°F.
Grease a muffin tin or use paper liners.
In a small saucepan over low heat, melt butter and chocolate. Add cranberries and pistachios. Let cool.
Mix together flour, sugar, eggs and vanilla. Do NOT beat; just mix until combined.
Fill prepared muffin tin with batter. For jumbo muffins, use about 1/3 cup of batter per muffin.
Bake for 30-35 minutes (for jumbo muffins) or until a toothpick comes out clean when inserted in the middle.
