Quick, easy and perfectly delicious!
Preheat the oven to 375 degrees. In a medium bowl, mix together the rhubarb, flour, sugar, vanilla extract, cardamom, and ginger.
For the topping, use a pastry blender to cut the butter into the flour in a medium bowl. Add in the brown sugar, oats, and salt.
Place the filling into an 8×8″ baking dish. Sprinkle the topping over the rhubarb mixture.
Bake for 25-30 minutes or until the top is golden brown. Let cool for 15 minutes before serving.
