Description

This is my favorite banana recipe. I roasted the bananas instead of waiting for them to ripen, and since I’m not a huge fan of nuts baked in my breads, I put them on top—in a streusel!

Ingredients

  • FOR THE BREAD:
  • 3 whole Bananas
  • 1 cup Granulated Sugar
  • 8 Tablespoons Unsalted Butter, At Room Temperature (Reserve The Wrapper)
  • 2 whole Large Eggs
  • 1 teaspoon Cinnamon
  • ⅛ teaspoons To 1/4 Teaspoon Fresh Grated Nutmeg
  • 1 Tablespoon Whole Milk
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt

  • FOR THE STREUSEL:
  • 4 Tablespoons Unsalted Butter, Cold
  • ⅓ cups All-purpose Flour
  • ¼ teaspoons Cinnamon
  • ⅓ cups Dark Brown Sugar
  • 1 pinch Salt
  • ⅓ cups (heaping) Walnuts, Chopped

Preparation

Preheat oven to 350 degrees (F).

Place bananas (peel left on) onto a baking sheet. Place in preheated oven and bake for 15 minutes. Bananas should be soft and the peels should be dark. Remove from the oven and set aside.

Now reduce the temperature of the oven to 325 degrees (F) and butter (using your reserved butter wrapper) and line a 9 x 5 x 3 inch loaf pan.

Cream the sugar and butter in a large mixing bowl on medium speed until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a small bowl, mash the bananas, cinnamon and nutmeg with a fork. Mix in the milk.

In another bowl, whisk together the flour, baking powder, baking soda and salt.

Add the banana mixture to the creamed butter/sugar mixture and mix until combined. Add in the dry ingredients, mixing just until flour disappears.

Pour batter into prepared pan and bake 40-45 minutes.

With ten minutes remaining on the clock, prepare the streusel topping by combining the butter, flour, cinnamon and dark brown sugar in a medium bowl. Using a pastry cutter, blend the ingredients. Add a small pinch of salt, and the chopped walnuts and toss.

After the 40 minutes of bread baking time, remove loaf and sprinkle on topping evenly and bake for 20-25 more minutes or until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for at least 15 minutes.

Slice and spread with honey or serve with ice cream, but I like mine still warm with butter!

Yummy. The streusel topping took it over the top for me. I already had dark bananas, waiting to make bread when I found your recipe. Next loaf, I will roast the bananas. Thank you for sharing

I’ve never made banana bread without buttermilk, but this one looks like it is worth trying. And the streusel topping sounds fabulous.

You could say I’m on a mission to find the perfect banana bread recipe. And of course I know “perfect” is a perspective. I love streusel toppings so this one is one I must try. I’ll post a review afterwards. Thanks for the recipe.

This is the BEST banana bread recipe I’ve tried…and I’ve tried a LOT. I think the secret is roasting the bananas and of course, the streusel topping! I divided the batter and made a large loaf and mini loaf, they were both perfect-sized loafs.

I can’t stop eating this bread. I thought I’d found THE banana bread for me a few months ago … then I tried this one. I may still try to find more types of banana bread, but honestly? This is so good, I’d be happy if it were the last one I tried! The streusel topping? I added 1/4 cup chocolate chips and it made me happy. It made me VERY happy :) Thanks for the recipe!

I doubled the recipe because I have a big family and I substituted whole wheat pastry flour. This was the best banana bread I have ever had in my life. It is so moist and delicious. The crumb topping makes it that much better! I will never make another recipe again.
