Light and crispy Sweet Potato Fries with Lime-Chipotle Mayo. Perfect for spring, summer, fall or winter! Is there ever a bad time for sweet potato fries?
1. Preheat the oven to 450 degrees.
2. Rinse and dry the potato. Peel and slice into 1/4″ fries.
3. Place in a bowl and add olive oil, paprika, salt, black pepper and garlic powder. Toss to coat thoroughly.
4. Arrange in a single layer on a rimmed baking sheet. I recommend using parchment paper or a silicone baking sheet, preferably the latter so the fries don’t stick to the pan.
5. Place in oven and bake for 20-25 minutes, turning once or twice to cook evenly.
6. While sweet potato fries are baking, mix together the mayonnaise, chipotle powder, cilantro and lime juice. Stir and refrigerate until ready to serve.
7. Remove fries from oven and allow to set for 2-3 minutes before serving.

Loved these! I had some of the lime-chipotle mayo leftover so I’ve been putting it on my turkey sandwiches for lunch. It’s so good!

These were a little too salty and spicy for my family. Maybe my sweet potato was too small? Anyway, I’ll definitely make these again but cut back on the spices a bit. The mayo was great with it!

We make Sweet Potato Fries often, so when I saw your recipe I thought I would change it up. Excellent! I am eating them right now. I found my Chilpotle Powder at Target, their Archer Farms brand of spices.

I thieved the chipotle powder from my parents house, so I have no idea where they got it, but would guess it’s availability is pretty standard (guessing). I found it here if works comes to worse:
