The perfect balance of sweet and salty, these crostini will make your mouth water. These would be wonderful for a dinner party, shower or an evening at home.
Preheat oven to 375 degrees. Slice your baguette into thin slices and brush with olive oil. Spread slices on a baking sheet and bake until toasty, about 10 minutes. You can serve your crostini hot or cold.
Meanwhile, take your prosciutto and wrap it around the manchego, slice your strawberries, tear off some basil leaves and try not to eat all the ingredients before you get a chance to assemble them.
First go the crostini, top with the proscuitto wrapped manchego, then a piece of basil, drizzle with balsamic and olive oil, grind some pepper over the top, add crushed red pepper flakes if you like things spicy and finally top with a slice of strawberry.
These are really fantastic, they look pretty on a plate and your guests will absolutely love them. Enjoy!

My sister and I hosted a Mothers’ Day Brunch and made these and they were wonderful – they looked beautiful and tasted delicious. The Manchego cheese tasted great.

I made these last night for a family gathering and they were a huge hit! Everyone rom age 5 – 60 loved them! I substituted a sweet mild blue cheese for the Manchego – beautiful and delish!
