All the ingredients of a classic caprese salad in a bite-size appetizer!
Combine the parsley, chives, olive oil, salt and pepper in a bowl. Toss with the mozzarella. Cover and set aside for at least one hour.
Cut tomatoes and basil leaves in half.
On a toothpick or short skewer, place one half of tomato, a piece of basil leaf, a mozzarella ball and finish with the second tomato half.

I made these for a party and could have eaten them all by myself! Fantastic!!
I used cut up mozzerella since it’s cheaper and you couldn’t tell a bit of difference.

I do these same appetizers…but without the parsley and chives…and they are ALWAYS a hit!!!

I hosted a baby shower over the weekend and I made these. Let me tell you….they were a huge hit! They are very simple to make yet they look very elegant. I will definitely make these again (a lot) and gave the recipe to several of the ladies at the shower who requested it. I was very tempted to take the credit, but I did direct them to this website and, specifically, to lanaann for posting it.
