A healthy frittata that is ready to go on the table in 20 minutes. A real crowd pleaser
Preheat oven to 200 C (400 F).
Heat the oil in an oven proof fry pan. Add onion, chili and red bell pepper and cook for about 3-4 minutes. Add tomatoes and stir to combine.
Beat the eggs in a small bowl. Pour the eggs over the top of the onion mixture and top with cheese. Transfer the pan to the oven and bake for 10-15 minutes or until egg is set throughout.
Place vinegar and cilantro in a bowl and whisk to combine. Serve frittata hot from the oven with coriander sauce on the side.
