Change it up this week by trying out a delicious and nutritious substitute to regular, plain white rice.
Break down the cauliflower into small florets. Using your food processor, break down the florets until they are about the size of grains of rice (be sure to scrape down the sides of the bowl so everything is uniform).
In a pan over medium-low heat, gently sweat the onions and garlic, about 5 minutes. Set aside.
Heat the cauliflower rice in a skillet/saute pan over medium-low heat, mixing often. Squeeze the lime juice directly over the rice. Add in the onions and garlic to the mixture. Gently cook just until hot; do not brown the cauliflower.
Right before removing from heat, add in the cilantro. Serve warm.
