Description

A rich, decadent, chocolate dessert for two in just minutes—and under 2 net carbs! Perfect for any special occasion or holiday, or to satisfy your chocolate craving. Suitable for Atkins, keto, LCHF, low carb, diabetic, low glycemic, gluten-free, grain-free, sugar-free, dairy-free, nut-free, coconut-free, low potassium, low sodium, CKD/Renal Diet. Ingredients

  • 2 Tablespoons Butter Or Coconut Oil, Melted
  • ¼ teaspoons Instant Coffee
  • ¼ teaspoons Vanilla Extract
  • 1  Large Egg
  • 3 Tablespoons Swerve Confectioners (powdered Erythritol)
  • 2 Tablespoons Sunfood Organic Cacao Powder (Zero Net Carbs)
  • 1 pinch Salt
  • ¾ ounces, weight Lindt Excellence 90% Dark Chocolate Bar (2 Squares)
  • Confectioners Swerve, For Dusting (optional)

Preparation

If you have a mug that will make a dome-shaped cake, that is ideal. Otherwise, use any mug or ramekin that holds at least 10 ounces. The cake will puff up a lot in the microwave, and an 8-ounce container may overflow.

Melt butter or coconut oil in mug for about 20 seconds, or until just melted. Add instant coffee and vanilla, stir. This gets the coffee dissolving in the warm butter.

Add egg and whisk with a fork until smooth. Add dry ingredients, except for Lindt chocolate, and whisk well again.

Break up Lindt chocolate into small pieces and put in the center of the mug. Poke down with the fork until just covered with batter.

Microwave on high setting for 40 seconds. Let stand for about 10 seconds. Run a knife around the edge of the mug, then invert onto a small serving plate. Use a small silicone spatula to get all of the “lava” out of the mug and drizzling down the cake. (Eat directly out of the mug, for a more casual serving.) If desired, dust with additional powdered sweetener. Serve warm.

Caution: The filling is very hot and could burn your mouth if eaten too soon after cooking!

If you want to save half of this cake for the next day, I recommend transferring to a small microwaveable bowl and covering with cling wrap overnight. Do not refrigerate or the chocolate will harden too much. Rewarm the second serving in the microwave for 10–15 seconds or so, just enough to melt the lava.

Notes:
• For paleo, use coconut oil in place of the butter, and substitute 2 tablespoons granular sweetener of choice for the Swerve confectioners. Consistency may be different with a granular sweetener.
