Turkey and cranberry are made for each other! These rollups make a quick meal for one, or about a dozen bite size pieces for appetizers. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free option, nut free (omit pecans), Paleo option, CKD, Low Potassium, Low Sodium, Renal Diet.
Pat turkey slices with a paper towel, if needed. Spread out on a mat or large plate.
In a small bowl, soften the cream cheese in the microwave for 10 seconds to soften. Mix in the cranberry sauce, stirring until creamy.
Divide the cranberry cream cheese mixture evenly on the 3 slices of turkey, and spread nearly to the edges. Sprinkle some of the chopped nuts on each turkey slice. Add a layer of spinach leaves and gently roll up into a tube.
Serve as a single meal, or slice into small bite size pieces to serve as appetizers, securing each with a toothpick, if needed.
Notes:
• For dairy free and Paleo, substitute Kite Hill almond based cream cheese.
