A rich and satisfying low carb tomato soup. I use Walden Farms Tomato Basil Pasta Sauce paired with no sugar added Italian Style Diced Tomatoes to get a great flavor and keep the carbs very low. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free. Dairy-free if milk substitute used in place of the cream.
Put all ingredients in blender and blend on high until desired consistency (just a few seconds). Transfer to medium saucepan, and heat over medium heat.
Pour into serving bowls.
Yields approximately 28 ounces, or 3 servings of about 1 1/4 cups.
Notes:
1. Salt was omitted intentionally. There is enough sodium in the canned goods.
2. For a low carb version of the traditional grilled cheese and tomato soup dinner, I serve a side of toasted low carb bread with cheese melted on top. A perfect pairing!
