Zero carbs of fun! Making jello is a fun and easy recipe for kids and adults alike. Flavors are unlimited, using diet sodas or flavored waters enhanced with any complimentary liquid flavor enhancer. This is one of my favorite combinations. Try using diet cola for a cherry-lime-cola flavor. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free.
Pour about 1/3 cup of the soda into a 2-cup glass measuring cup. Sprinkle gelatine over the top and allow to sit for 5 minutes.
Microwave gelatine mixture for 45 seconds and stir lightly. Gelatine should be dissolved.
Slowly add remaining soda, allowing bubbles to settle as needed. Add flavor enhancer and lime juice, then fill with water up to the 2-cup mark. Stir, again allowing bubbles to settle (or skim off with a spoon).
Pour into 1/2-cup containers with lids. Refrigerate until completely jelled, about 3 hours. Serve.
Store covered in the refrigerator for up to 2 weeks. Do not freeze.
