A creamy dish of fresh out of the garden zucchini and buttery bread crumb topping!
In a large skillet, saute zucchini in olive oil until half cooked.
Meanwhile combine soup, sour cream and seasonings.
When zucchini is al dente combine with sour cream mixture and pour into a 13×9 pan.
Combine stuffing and melted butter. Top zucchini with buttered bread crumbs.
Bake at 350 for 30 minutes! Enjoy!
*Sometimes I use 1 lb zucchini and 1 lb yellow squash.
