This is my favorite zucchini recipe! I can’t wait until the squash are ready in my garden each year so that I can make this yummy dish. It’s so very simple, yet so very delicious!
Preheat oven to 350 degrees.
Slice zucchini into rounds, about 1/8 inch thick.
Slice onion and separate into rings.
In a 9″ x 13″ glass baking dish, start a layer of zucchini, overlapping the rounds. Top with onion rings, again overlapping the pieces. Repeat and then finish with a layer of zucchini.
Cover with microwave-safe plastic wrap and cook on high power for 8-10 minutes, or until squash are tender and can be pierced with a fork.
Remove plastic and cover the surface with cheese, and then sprinkle on breadcrumbs.
Bake at 350 degrees for about 15-20 minutes, or until cheese is melted and beginning to brown.
Let cool for a few minutes before slicing and serving.
