A tasty fried rice that is flavourful and yet very easy to make. It took me around 20–25 minutes max!
Heat the oil in a deep dish on medium high. Add the onions and chillies and fry till they are lightly browned. Add the ginger garlic paste and fry till it is fragrant—you should be able to smell the cooked paste. Add the bay leaves and fry for a couple of minutes.
Add the washed rice to the pan and fry till the rice is slightly transparent. Then add the stock and water. Mix well. Taste and add any salt if needed. Let it come to a boil. Then reduce the heat to medium and cover the pan. When the rice is nearly cooked, cover the lid with a cloth so that the steam stays in the pan. Reduce the heat to low at the same time. After a few minutes, you should start seeing steam rise from the sides; that means that the rice is cooked. Give it a couple of minutes more, then turn off the heat.
Garnish with coriander leaves and serve!
