Description

Often referred to as “squash dressing,” this side dish is delicious.

Ingredients

  • 6 cups Diced Yellow Squash
  • 2 Tablespoons Vegetable Oil
  • 1 whole Onion, Chopped
  • 4 Tablespoons Butter
  • ½ cups Sour Cream
  • 1 teaspoon Salt
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Pepper
  • 1 cup Grated Cheddar Cheese
  • 1 cup Crushed Ritz Crackers

Preparation

Preheat oven to 350 degrees. Saute squash in oil over medium low heat until it has broken down, about 20 minutes. Remove from heat and allow excess moisture to drain from squash in a colander. Set aside.

Saute onion in butter for 5 minutes.

Mix all ingredients except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 30 minutes until golden brown and bubbly.

This was so amazing! The sour cream and cooked onions and squash set this apart from the usual squash casserole. YUM!!

This turned out great! I was originally worried that 6 cups of squash, but it cooks down to a very manageable amount. I will make this again. Thanks so much for sharing this recipe!
