Smoky whipped sweet potatoes with Gruyere cheese, cumin, and smoked paprika: a perfect side dish for the new year (and obviously new you) because they’re good for you (mostly)!
Preheat oven to 425ºF.
Using a fork, pierce the sweet potatoes in several places. Roast for 45 minutes to 1 hour, until cooked through and soft. Let cool 10–15 minutes. Using a spoon, remove the flesh of the potatoes and place in a bowl.
Using a hand mixer or fork, whip sweet potatoes until smooth. Add Gruyere cheese, heavy cream, cumin, smoked paprika, salt, and pepper. Mix until combined. And eat!
