Description

Turmeric powder adds a great color to any fried rice. It adds some nice health benefits as well!

Ingredients

  • 3 cups Jasmine Rice
  • 3 cups Water
  • 1 Tablespoon Turmeric Powder
  • 2 cloves Garlic, Minced
  • 4 slices Bacon
  • 2 Tablespoons Reserved Bacon Grease
  • 4 Tablespoons Unsalted Butter
  • ½ cups Cooked Chicken, Chopped
  • 3 cups Cooked Jasmine Rice (Best If This Is Leftover Cooked Rice From The Day Before)
  • 1 whole Egg, Beaten
  • ¼ cups Soy Sauce, Optional
  • ½ cups Frozen Peas
  • 1 pinch Salt To Taste
  • Red Chili Flakes, Optional, To Taste

Preparation

Start by cooking your rice. Rinse the rice until the rice is no longer cloudy. We use a rice cooker, using a 1-to-1 cooking method. Add rice and water into the rice cooker. Add the turmeric and the garlic to the rice cooker and give a good stir. Cook according to manufacturer’s instructions. This is more than you’ll need for this recipe so eat some of it now, if you like. It’s best if you can make it the day before and refrigerate until you are ready to make the fried rice.

In a large skillet or wok over medium heat, cook your bacon until crisp. After cooking your bacon, set it aside on a plate lined with paper towels. Once it’s cool enough to handle, crumble it and set it aside.

Remove and discard all but 2 tablespoons of the bacon grease. Into the skillet with the grease, add the butter and let that cook on medium heat until it is nice and bubbly.

Add the cooked chicken and get a bit of color onto it, cooking for a couple of minutes. Add the rice and start breaking it up with your wooden spoon.

After a few minutes of cooking the rice, add the beaten egg, and start mixing up the rice. Next add the bacon pieces and soy sauce, and continue to cook for a minute or two.

Turn up the heat to medium-high. Add the peas and stir. Continue cooking on medium-high heat until you get a bit of some crispy fried rice going on. Once you are satisfied, taste, and season with salt or other spices such as chili flakes or chopped chilies.

This turmeric fried rice was great. As much as my kids questioned the color, they dug in and realized that it was their standard fried rice, but with the added benefit of turmeric. What’s your favorite way to make fried rice? I’d be curious to know. Hope you enjoy!
