This is just like the Tokyo Fried Rice you’ll find at Japanese restaurants!! It’s my husband’s second favorite rice dish…his first is Sushi Rice Salad – which I’ll post shortly!
Scramble the eggs in 1 Tablespoon of oil and set aside. Heat remaining oil over medium-high heat and fry carrot, celery and onion until tender. Add the cooked rice, and fry until brown and starting to crisp in areas. Then add scrambled eggs, tamari and sesame oil and mix until well combined and heated through. Serve!

Tamari is a premium soy sauce. Regular soy sauce would do!
