Chili garlic sauce and cilantro give this vinegar cucumber salad a new twist.
In a small saucepan, bring sugar, salt, chili garlic sauce, brown rice vinegar and water to a boil. Remove from heat when sugar is dissolved. Set aside.
Peel, halve and seed 3 medium cucumbers. Cut into 1/4″ thick slices. Place into medium sized bowl. Thinly slice red onion and add to cucumbers. Pour dressing over cucumbers and onions. Chop cilantro and toss with cucumber mixture. Refrigerate and serve as a side salad.

Loved this! Made it last night when my friend was coming over with orange glazed chicken with spicy thai pasta. I needed a quick Thai side to contribute, and this was perfect!
