I’m pretty much completely in love with rice, but I always have to add things to other recipes I try in order to give it as much flavor as I like! So, here’s my light, easy version. Delicious with grilled chicken for a healthy dinner!
Melt butter in a large sauce pan. Sauté onion and garlic (roasted and fresh) in butter over medium heat, stirring frequently, until onion is translucent. Add rice and cook, stirring frequently, until a brown fond has formed on the bottom of the pan.
Add stock and some salt, stir, and bring to a boil. Reduce to simmer (low) and cover to cook, about 15-20 minutes with regular rice, 10 minutes for the faster cooking rice.
When rice is cooked, turn off heat, add parmigiano and green onions and fluff with a fork.
Yum!
