This is a great summer vegetable dish and a great way to use up extra cucumbers. (Cook time is fridge time!)
Thinly slice the cucumbers. Slice the onions into rings. Soak cucumbers and onions for 1/2 hour in salted water. Drain, but do not rinse.
Mix together vinegar, water and sugar until sugar is dissolved. Pour over the cucumber and onion. Place in the refrigerator for at least 2 hours (I usually wait 24). The longer they sit before eating, the better they are.
