A delicious way to eat spinach!
Dice onion and saute in olive oil over medium heat in a medium sized pot until onion becomes clear. Add 2 cups of chicken broth, rice and the can of tomatoes.
Squeeze away as much liquid from the thawed spinach as you can. Add drained spinach to pot. Add a pinch of sugar. Cook on low to medium heat until rice is done (according to the timing recommended on the rice package). The rice will soak up most of the liquid. It shouldn’t be soupy. Add salt and pepper to taste.
Enjoy! This is a great side dish to grilled chicken or lamb.
