My husband makes these potatoes on a regular basis during the grilling months. You can throw them together quickly, and they cook up in about 15 minutes. They’re the perfect side dish for almost any entree. Each packet serves about 2-3 people, so just throw together as many packets as you need and grill them side by side.
1. Using a mandolin slicer, cut your potatoes into thin slices.
2. Lay out a large piece of tin foil. Place one layer of potatoes on the foil. Sprinkle with 1/3 the Creole seasoning.
3. Flip the potatoes, and repeat.
4. Top with another layer of potatoes, and sprinkle with Creole seasoning. Dot with butter.
5. Fold in the sides and ends of the foil, then wrap in a second sheet of foil. (This, allows you to test your potatoes while they’re cooking, without having to unwrap the entire packet.)
6. Wrap everything tightly, and then grill on the top rack of a grill over medium heat (or use indirect heat).
7. Cook about 15 minutes, or until potatoes are tender.
