An easy, healthy, colorful, and flavorful variation of black beans and rice. Not only is it rather cheap to make, but it reheats well for many meals or side dishes.
1. Pour olive oil in large skillet and warm over medium heat. Add garlic, onion, and pepper.
2. When vegetables begin sizzling, stir in cayenne pepper. Occasionally stir mixture until thoroughly cooked, about 8 minutes. Do not let vegetables brown.
3. Reduce heat a little and add black beans. Incorporate beans into vegetables and let warm for 4 minutes. Mixture will be slightly bubbling.
4. Reduce the heat to low and fold in rice. One combined, sprinkle in salt. Serve warm.
