Description

Creamed corn with a twist of goat cheese, cumin, and cilantro!

Ingredients

  • 10 ounces, weight Frozen Corn
  • 2 Tablespoons Butter
  • ½ cups Half-and-half
  • 1 Tablespoon Cilantro
  • 1 Tablespoon Goat Cheese
  • ¾ Tablespoons Sugar
  • ½ teaspoons Cumin
  • ½ teaspoons Coriander
  • ½ Tablespoons Water And Flour (each), Mixed
  • 2 Tablespoons Water
  • ½ teaspoons Black Pepper

Preparation

Melt butter in a large skillet. Add the corn and water and cook until corn is tender. Stir in flour and water mixture, goat cheese and sugar and stir until thoroughly combined. Slowly add the half-and-half and stir continuously until mixture is smooth. Stir in cumin, coriander, pepper and cilantro.

I made this for Easter and it was delicious! I did not add the cilantro becuase some people aren’t fans and it was great. I think the cilantro would be great in it though too!

I just made this recipe this afternoon for my husband and my parents. It’s delicious, and so simple to make! I was never a huge creamed corn fan but I love this dish and I think I will make it as a side regularly. Thank you for the lovely recipe!
