I make this rice frequently. It is the best-tasting homemade Spanish rice I have ever eaten.
In a 10-inch skillet, cook bacon till crisp; remove. To the bacon grease, add onion and green bell pepper and sauté until tender but not brown. Add tomatoes, water, rice, hot sauce, salt, pepper, brown sugar, and Worcestershire sauce and half of the bacon. Cover and simmer 35-40 minutes. You will need to stir it a few times to prevent it from sticking to the bottom of the pan. Top with remaining bacon. Serves 6.
If you have a rice cooker, you can cook the bacon and sauté the onion and pepper on the stove and then transfer everything to the rice cooker, which is what I do.

We think Frank’s hot sauce taste’s much better than tabasco, adding flavor with the heat as opposed to just that vinegary taste. That may make a difference too? Sounds yummy!

I do like it hot! I revised the recipe since I realized most people don’t like it as hot as I do.

Hi, I made this last nite, it was good but a little spicy hot for our taste, now in the recipe you call for 1/4 cups of Frank’s Hot Sauce, did not have Franks, only regular tabasco, when I saw the 1/4 cups, I thought thats way too much for us and only added about 3/4 of a tbls, this proved to be too much, had to add a little water to try and unhot it. I was wondering if the 1/4 cup was an error or do you really like things wicked HOT?
