Description

Amazing, healthy and low fat mashed potatoes made with delicious kale and garlic!

Ingredients

  • 5 whole Large Russet Potatoes, Rinsed And Quartered
  • 4 cloves Garlic
  • ½ Tablespoons Olive Oil
  • ⅔ cups Organic Chicken Broth
  • 2 Tablespoons Low-fat Cream Cheese
  • ¼ cups Fat Free Sour Cream
  • 1 cup Wilted Kale
  • 6 dashes Salt And Pepper

Preparation

Prepare potatoes by cutting them into quarters and placing them in a large pot. Add enough water to cover them and set to boil. Boil potatoes for about 6 minutes, or until soft when pierced with a fork. Rinse and place back into the pot.

While potatoes boil, saute garlic in olive oil until softened, about 4 minutes.

Add in chicken broth, cream cheese, sour cream and garlic. Beat with a handheld mixer or immersion blender until soft. Stir in wilted chopped kale. Add additional chicken broth or cream cheese for creaminess. Season liberally with salt and pepper and enjoy!

We had these potatoes tonight with BBQ chicken sandwiches and loved them. The kale was lovely and not at all bitter tasting and its contrasted well with the creamy potatoes. Thanks for sharing this recipe!
