Description

Jazz up freshly steamed green beans, or roasted vegetables with this savory streusel topping. Comforting vegetables without being a heavy casserole.

Ingredients

  • ½ pounds Fresh Green Beans
  • 1 cup Water (for Steaming Green Beans)
  • ½ Tablespoons Unsalted Butter, Softened
  • ½ cups Old Fashioned Oats (not Quick Cooking)
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic, Peeled And Chopped (about 1 Tsp.)
  • 1 pinch Kosher Salt
  • 1 pinch Black Pepper
  • ½ cups Parmesan Cheese, Finely Grated

Preparation

For Streusel:
1. Heat oven to 350 degrees F.
2. Spread oats in a single layer on a rimmed baking sheet, and toast them in the oven, stirring occasionally, until oats are very lightly golden brown. (about 10-12 minutes). Set aside while you prepare the green beans.

For Green Beans:
1. Rinse the green beans and trim the ends off.
2. Place beans in a steamer basket in a saucepan with 1 inch of water in the bottom.
3. Steam the green beans over high heat, until done to your liking. I steam mine for 5-7 minutes for crisp-tender. Set beans in a shallow serving dish, toss with 1/2 Tablespoon of butter, and tent with aluminum foil to keep warm.

To Finish Streusel:
1. Heat olive oil until hot, in an 8 inch skillet over medium heat.
2. Add garlic to hot oil and cook until golden brown, about 30 seconds.
3. Add the toasted oats, and a hefty pinch of salt and pepper, stirring to coat the oats. Cook for 1 minute.
4. Add the parmesan and continue cooking until the topping begins to clump; stirring constantly. (About 1 minute.)
5. Remove from heat, and sprinkle streusel over the steamed green beans. Serve hot.
