Here is tip that makes working with butternut squash SO much easier!
Place your butternut squash (one at a time) into your microwave and microwave for 3 minutes.
Let it cool for a few minutes. This will make cutting your squash SO much easier and help it cook just a bit faster as well!
Peel and chop your butternut squash into cubes.
Add the oil and the squash to your pan and cook over medium high heat. Add in the thyme and stir well.
Cover your pan but stir every minute or so.
Add in your sugar, cinnamom and cardamom mixture and continue to stir, keeping covered as often as you can.
Once the squash is fork tender, adjust seasoning to your liking and serve.
Enjoy this easy and healthy dish!

I am so going to try this with butternut I grew this summer and still storing in my garage. I love it! Thanks for sharing. I love it roasted or pureed into soup also.
