I was making perogies one day (my kids LOVE them) and wanted to use up the fresh spinach in the fridge. We used this as a topping for the perogies. Hope you like it!
1. Heat oil in a large skillet over medium heat.
2. Add onion and garlic, saute until tender.
3. Add the sausage, and saute until fully cooked, or no pink remains.
4. Sprinkle the basil over top, and then the spinach. Stir gently until all the spinach is just wilted.
5. Salt and pepper to taste.
Note: Ground sausage meat will work just as well. I like to slice the sausages while they are bit frozen still, and then they cook up in nice-sized chunks.
