This is a marvelous side dish! I got this recipe from the late Dorothy Grandjean when we visited their home in New Mexico.
In a heavy skillet, brown sausage, celery and onions. Add rice and drain grease. In a sauce pan, combine soup mix, water and stir over medium high heat for 7 minutes. Pour over sausage mixture, stir in carrots. Pour into a lightly greased casserole dish. Bake covered in a 350ºF oven for 1 hour. Our family loves this and you will too!

Hey, Marvin. This looks pretty good! I’m thinking about giving it a try with a can of those spicy carrots with jalapenos. I’ll let you know how it goes. Thanks for sharing another great recipe.
