Description

This recipe for Saffron-Drizzled Celeriac Puree elevates the humble celery root to gourmet status. Don’t be intimidated—it’s a simple, quick and easy recipe!

Ingredients

  • 8 cups Celeriac, Cut Into 1-inch Cubes
  • 2 Tablespoons Butter
  • ½ whole Lemon, Juiced
  • ¼ teaspoons Paprika
  • 3 whole Saffron Threads, Broken Up Between Your Fingers
  • 1 pinch Black Pepper
  • ½ teaspoons Salt
  • 1 cup Shredded Parmesan Cheese
  • 2 Tablespoons Parsley, Minced

Preparation

1. Place celeriac cubes into a steamer. Steam until soft and easily pierced with a fork. This will take approximately 15 minutes.

2. Next place butter, lemon juice, paprika, and saffron into a small saucepan. Bring to a simmer and continue simmering for 3 minutes, then remove from heat.

3. Once your celeriac is done steaming, place it into a bowl with the pepper, salt and Parmesan cheese, and puree using a hand blender until smooth. If you don’t own a hand blender, you can use a hand mixer, but you’ll end up with more of a mash, as opposed to a puree. Either way, it is still tasty.

4. Plate your puree and then drizzle with the lemon saffron butter and top with parsley.
