Roasted vegetables are so yummy and could not be easier to make. The heat brings out a wonderful sweetness, making these Roasted Carrots one of our favorites!
Preheat oven to 400ºF.
Clean and peel the carrots. Cut off tops and bottoms. Slice carrots into 1 1/2 inch pieces on the bias.
Place on a sheet pan and drizzle with olive oil and add salt and pepper. Sprinkle with chopped onion. Give them a quick toss with your hands.
Roast in the oven for 20 minutes, until slightly browned and tender.
