A sweet and salty side dish for BBQs. This recipe has no real measurements. It’s easily made to match your meal.
1. Cook the amount of rice that you’ll need for the number of people you are feeding. I usually leave it just this side of done so there is still a bit of water in the pan.
2. Brown your onion in butter (you could add a bit of olive oil) until carmelized. Turn off the heat and throw in your raisins (maybe about 1-1/2 cup) and stir just to warm them a bit and cover with butter.
3. Turn the heat on again higher than before and throw the rice (still a little bit wet) into the pan and stir to coat it all and stream the water out of it. The flavors will start mixing as it steams. Add salt and pepper to taste.
This is good hot or cold and warms up nicely the next day!
