Fresh shredded zucchini tossed with pasta, olive oil, garlic, and parmesan cheese.
Drain pasta and set aside. In a small saute pan over medium high heat, heat olive oil. Add garlic garlic and seasoned salt. Once oil is hot, add zucchini and saute for 5 minutes (or until tender), turning occasionally. Grate Parmesan cheese over pasta and and stir together. Once zucchini is cooked, add pasta and toss together until pasta is warm.

I have a julienne peeler that works fantastic for zucchini. I julienne the zucchini, but instead of sauteeing it with the olive oil, I just place it in the colander and pour the cooked pasta and water right on top of it. It warms it, but leaves it a very nice tender crisp consistency. After it drains for a few minutes, I add the pasta and zuchinni into the olive oil mixture and toss. It’s fantastic and easy.
