A strange hybrid of roasted and baked potatoes, with lots of smoky paprika. All the benefits of both types!
Preheat the oven to 200°C (Gas Mark 6 / 400°F).
Wash the potato thoroughly and cut out any parts that are sprouting. Stab it several times with a sharp knife and place it on a microwaveable plate. Heat on full power for approximately 7 minutes, depending on the size of the potato. Remove it from the microwave when it is soft enough to easily poke with a fork but still not quite edible.
Set the potato aside to cool for a several minutes until cool enough to handle, and then halve it. Slice a grid into each half, only cutting to the skin, not all the way through. Place each half on a baking tray and sprinkle liberally with paprika. Drizzle a little oil over each half and roast for around 30 minutes, until crispy.
