This recipe has so much flavor in it from garlic, onions, bell peppers, celery and spices that the cauliflower just bursts with yumminess.
In a large skillet, heat olive oil and add garlic, onions, celery, peppers and scallions. Sauté for 5 minutes.
Stir in cauliflower, spices, and chicken broth. Add bay leaf and simmer for 20–30 minutes until broth is absorbed. Serve hot.
