Description

Broccoli and cauliflower tossed in Parmesan cheese and egg to get a crispy outer coating, but not fried in oil—baked to perfection.

This recipe takes veggies to another level and may be just what is needed to get your kiddies to eat some!

Ingredients

  • 2 cups Broccoli Florets
  • 2 cups Cauliflower Florets
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Minced Garlic
  • ½ teaspoons Salt
  • 1 whole Egg, Beaten
  • 1  Egg White
  • ½ cups Grated Parmesan Cheese

Preparation

Preheat oven to 400ºF. Spray a baking sheet with olive oil cooking spray.

Place the florets in a large bowl. In a small bowl, mix together the oil, garlic, salt, egg and egg white. Toss with florets. Sprinkle Parmesan in with the florets and mix to coat.

Lay on baking sheet in a single layer. Bake 20-30 minutes until browned and vegetables are tender.
