This Mushroom Wild Rice Pilaf is simple, fresh, and packed with flavor!
In a large skillet, combine olive oil and butter over medium heat until melted. Add onion, mushrooms, minced garlic, salt and pepper. Saute for 5–7 minutes, or until mushrooms are tender.
Stir in rice and chicken broth. Bring mixture to a boil, then reduce heat to low, cover, and simmer for 30–35 minutes, or until most of the liquid is absorbed. Remove from heat, add chives, and fluff with a fork.
Serve immediately. Enjoy!
