Description

This flavor-packed recipe is super simple. I bet you already have most, if not all, the ingredients on hand. So there’s no excuse to not try it! Trust me, you will love this rice. It is really easy to change the flavor to your liking by using your favorite salsa.

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ cups Chopped Onion
  • 2 cloves Garlic, Minced
  • ¼ teaspoons Salt
  • 1 cup Long Grain Rice
  • 1-¾ cup Chicken Broth
  • ¾ cups Salsa
  • ¼ cups Water
  • ½ Tablespoons Lime Juice
  • 2 Tablespoons Chopped Cilantro

Preparation

Over medium-high heat in a medium to large pan, warm the olive oil. Add onion, garlic and salt and cook for 2 minutes, stirring occasionally.

Add rice and cook for 1 minute while stirring. Add broth, salsa, water, and lime juice and stir. Bring to a boil. Once boiling, cover and reduce heat to low and simmer for about 20 minutes. If rice is not tender after 20 minutes, cook for an additional 1-3 minutes.

Remove pan from heat and uncover. Add cilantro and toss around. Let it stand for about 5 minutes, then serve.
