These potatoes are smooth and creamy, with a nice buttery taste!
Place nearly half a pot of water (enough to cover potatoes) on the stove and bring to a boil. Add a dash of salt during this time. Add cubed potatoes and boil for approximately 20 minutes or until fork tender. Drain.
Place drained potatoes in a large mixing bowl. Add butter, half-and-half, salt, and pepper. Mix on low to medium speed until smooth, scraping sides occasionally (3-5 minutes).
If you are transporting the mashed potatoes, bring along additional 1/2 stick butter and 1/4 cup half-and-half. The potatoes thicken as times goes by and this will make them creamy like when you first prepared them.
