I love combining different foods to see what I can come up with. This is one of those examples. I used last night’s leftover mashed potatoes.
In a large bowl, combine all the ingredients (except the oil and butter).
In a large skillet, heat 1 tablespoon olive oil and butter over medium high heat and then drop four 1/4 cupfuls of batter into skillet. Cook for 1-2 minutes on each side or until golden brown. Repeat with remaining batter.

my dad makes something like this every year when we’re trying to get rid of the last of the mashed potatoes after every thanksgiving!
