Description

Oven-caramelized butternut squash with just a hint of maple flavor.

Ingredients

  • 1 whole Butternut Squash, Cubed
  • ¼ cups Olive Oil
  • 1 teaspoon Fresh Cracked Pepper
  • 1 teaspoon Salt, Or To Taste
  • 2 Tablespoons Pure Maple Syrup

Preparation

Preheat oven to 375ºF.

Cut squash into cubes (see my site for instructions). Drizzle baking sheet with olive oil, salt and pepper. Toss in the squash, using your hands or a spatula to coat all of the cubes. Drizzle maple syrup on top and toss again.

Make sure cubes are in a single layer on the pan. Roast in the oven uncovered for 30 minutes. Check for doneness and roast for an additional 10 minutes if needed. Cubes should be nicely caramelized and a fork should pierce through the squash easily when done.

I made this as a side dish for dinner and it was great! My husband and I gobbled it up and then wished we had made more!

This was delicious and was great as leftovers. I didn’t have maple syrup but used good old pancake syrup.

My family loved this squash – even the kids who are picky eaters! The only thing I did differently was bake it at 425 degrees for 20 min. as I had it in with a roast. Turned out perfectly!

Simple and delectable. The only problem was clean up. I will definitely use a silpat next time and hopefully it will help out.
