A few months ago, I received Claire Robinson’s cookbook, Five Ingredient Fix. As part of my ongoing review, I’ve made another one of Claire’s recipes, this time with my own special twist (and an extra 3 ingredients). So, it’s more like Kate’s 8 Ingredient Fix. This time, I made Maple Bacon Sweet Potato Mash and let me just say, wow! These made even a non-sweet potato eater ask for seconds!

Ingredients

  • 4 whole Sweet Potatoes
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Olive Oil
  • 4 slices Bacon
  • 1 whole Red Onion, Sliced
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Dijon Mustard
  • ½ cups Parmesan Cheese

Preparation

Start by peeling 4 sweet potatoes. Dice em’ up into 1 inch cubes. Lay them out on a baking sheet, season with salt and pepper to taste and drizzle with olive oil and maple syrup. Bake at 375F for 1 hour.

When you’ve only got 20 minutes left, add your bacon to the oven (I baked it on a broiler pan).

While your goods are baking, slice a large red onion and saute in a hot skillet with more olive oil and maple syrup. Season with salt and pepper. Saute until the onions are softened.

Then, in a large bowl, combine your onions with the dijon mustard and your roasted sweet potatoes. Crumble up half of your bacon, add it to the bowl, and start mashing. Sprinkle in some freshly grated parmesan cheese and continue mashing until desired consistency. Top with remaining bacon and more cheese.
