A low carb version of fried rice. Great for diabetics and low carbers.
Wash and shred the cauliflower. Cook the shredded cauliflower in the microwave for 3 minutes.
Add oil to a skillet, and add the cauliflower. Cook for 3 minutes, stirring often. Then add peas and carrots (you can add them frozen straight from the freezer).
Mix an egg in a bowl. Make a well inside the cauliflower mixture, and add the egg. Stir all together and cook for another 2 minutes. Add the soy sauce.
You can also add grilled chicken to this, or tofu.

Thank you for sharing this recipe! This fried rice was so amazing, I had to stop myself from eating it all! My only issue was that shredding the cauliflower wasn’t very easy. But it was worth it (might try to shred in my food processor next time instead of by hand). Thank you! Oh and if you enjoyed the cauliflower as a healthy and yummy substitute, try making mashed fauxtatoes with cauliflower. Divine!

I made this last night, it is so good. I added chinese 5 spices and a bit of garlic. I think next time I will add some fresh ginger. My neighbor tried it and loved it. I had my son eating it until my husband told him it was cauliflower!!
