I was craving stuffing one night but all I had was rice in the house. This has become a favorite around my house. It’s great by itself and REALLY great with pork!
Chop celery and onion and saute until tender. Toast pine nuts until golden brown.
Cook rice according to package instructions. Combine cooked rice, sauteed veggies, pine nuts, Craisins and pepper. Stir and serve. Fresh parsley can be added at the end but not necessary.
Eat, repeat. Enjoy!
